I use watco butcher block oil. Have had my butcher block for 5 years, still looks great.
Chuck: you have a few options. All of which require several coats and make sure they are on all sides and edges of the birch block. 1. I have kids that crawl over everything including my counters so I use a flooring-grade polyurethane. 2. Butcher Block Oil 3. Butcher Block Conditioner. All three will work. The poly will be the most maintenence free over the years.

John--I always use screws. Guessing you are attaching legs or fastening these tops to cabinets. I like to take the thickness of the wood--1-1/2" + whatever you are attaching to and leave 3/4" to make sure the screw does not accidently puncture the top of the wood. So if the cabinets are 1/2" and the top is 1-1/2" for a total thickness of 2" use a 1-1/4" wood screw.
