For what it's worth, when I purchased my 400 series (4-burner) I went with the Weber Genesis II 4 Burner Premium Gas Grill Cover. Weber offers a 3 burner version of this that will fit your grill. However, you make a solid point about not having information clearly posted about it.
Does this fit the new 2022 Genesis E-325s grill?
No, it does NOT fit 2022/New generation of Genesis 3-Series grills, even though the box has a sticker that says it does. It is tighter than a pair of rubber gloves on a 325s, so it definitely does not meet the needs of the new specs, and will be frustrating long term taking it on/off with a fit this tight. You'll definitely want to consider other manufacturers whose covers allow you some wiggle room - that's what I did!

No, it does NOT fit a 2022 Genesis 325s. I just bought one online from Home Depot and this cover, Model 7130, was the one Home recommended adding to the order. Unfortunately, it doesn't really fit. The correct cover for a 2022 Genesis 325s is Model 7757.
How does this hold up to snow, ice, or torrential downpours?

Pretty well. I've had it for almost 3 years now. My grill is on my raised deck and it gets exposed to some pretty harsh conditions. Full sun in summer, brutal cold and snow in winter, high winds year round. No cracks or tears. I use my grill year-round. The cover gets a little stiff in the cold, but is easy enough to take off and put on.
Im in Southern CAlifornia where the weather is mild..After 2 years, the Velcro that holds the ends tightly against the grill is not sticky anymore. The rest of the cover is in great shape & spraying it off works well.
It does a wonderful job keeping my grill dry but clean also

How does it stand up to sunlight and 90 degree temperatures? Will it shrink, rip and/or crack?
I am on my second one. The first one lasted a little over 3 years. The fabric was still good but the Velcro quit holding.
I have used it for 3 years. my grill stays out in the open 24/7 for the summer months and the cover looks new. no shrinkage, no rips, no cracks and the color doesn't fade.
I have this cover for over 4 years. My grill stay outside with the cover on. It stand up well to the Southern California weather. The color faded a little but no cracking or shrinkage.

Yes it stands to temperatures of 100 degrees. I’ve had it for 4 years now. The only thing that isn’t working to well is the Velcro but it still looks good
