This 12-gauge THHN wire is rated for 30 amps at 600 volts. A device drawing 1000 watts at 120 volts would require approximately 8.3 amps (Watts / Volts = Amps). This is well within the wire's capacity, so there should be no issue. However, it's always recommended to consult a qualified electrician to ensure proper and safe installation for any electrical project.
To run a typical 120 volt, 20 amp circuit, you would run three colors of this wire, usually black (for hot), white (for neutral) and green ( for ground) inside of EMT conduit. 12/2 is Romex which has the three wires encased in sheathing, no EMT needed.
NM-B cable (Romex), the most common wire used in residences, is rated for dry locations only. This wire can be combined with additional single wires of varied colors – run within a conduit – for circuits located in either wet or dry locations.
I've been using it to connect my solar panels to the controller for almost a year and I haven't had any problems.

For wiring a train layout it seems a bit large but it's really OK. For DC trains, color doesn't matter. There is no grounding wire
The best course would be to verify the application with a licensed electrical professional.
